Vegan Spinach Dip

Dips need neither cream nor butter

Dips can be rich sans cheese

Skip the mayo and the boring ricotta

This spinach dip is but a breeze!

Try this vegan, dairy free, sugar free and gluten free dip this Christmas. The Christmas colours are a bonus, too!

Ingredients

2 packed cups fresh baby spinach

¼ cup cashews, soaked in half cup warm water for 30 minutes

1 small clove of garlic (optional)

A pinch of grated nutmeg

A pinch of toasted and ground cumin

A small piece of green chilli (optional)

Lemon juice to taste

A pinch of Splenda (optional)

Salt and freshly ground pepper to taste

Method

Blanch the spinach leaves for a minute in hot water or zap them in a microwave for 20 seconds and then plunge into cold water. When cool, drain add the spinach to a blender and add the soaked cashews and the rest of the ingredients and grind till almost smooth. Adjust the flavours and chill.

Serve as a dip with crudités and rice (or multi-grain, if that’s ok) crackers You can use this dip as a sandwich spread as well.
